We’re having beautiful days and cooler nights in Melbourne at the moment and this is the kind of food I’m craving. I’ve been making my own gnocchi and I’ll include the recipe for that below. But you can easily use store bought or your favourite recipe. Pasta would also be delicious with this sauce.

Keeping things bright and colourful this week as it’s totally helping my mood amongst the drudgery. I’m thinking of starting some sort of travel themed night each week to also stop the drudgery, anyone else doing this?
Lemon and Thyme Skillet Roasted Chicken
This is such a great way to roast chicken on a week night. By starting it in a hot skillet you’re guaranteeing crispy golden skin and juicy chicken. You can prep it the night before if you remember!

One more week of stage 4 week lockdown to go and it’s been the nicest weekend of sunshine and spring blooms. I’m more aware of the change of seasons than ever before and want my plate to be as colourful as everyone’s garden.
Corn and Cabbage Slaw with Satay Sauce
I love a crunchy salad. And I love Satay sauce. This salad is made both more delicious and more filling with the addition of roasted nuts and a creamy satay sauce.

How are you all feeling? I’m on a bit of a roller coaster at the moment. I’m mostly fine, this situation in Melbourne sucks, but my personal situation is pretty great so I’m very aware of how lucky I am. That said the internet is a scary place at the moment and I’m finding the anger and division particularly draining. So I’ve spent most of today away from it and that’s so helpful.

This week has been interesting. I’ve had days where I just… couldn’t. Didn’t feel like being productive or achieving anything. And that’s fine because other days are great! I feel it’s so important to give myself time and space to feel what I’m feeling in this ongoing lockdown. And today I feel like sharing a meal plan with you!
The weather is warming up and it’s totally helping my mood. It’s also Father’s Day today and 3 beautiful friends have had birthdays this week. Not seeing them sucks but finding things to send them that will make their day in lockdown a little brighter is cool in its own way.
