Keeping things bright and colourful this week as it’s totally helping my mood amongst the drudgery. I’m thinking of starting some sort of travel themed night each week to also stop the drudgery, anyone else doing this?

We cook at home most of the week but make sure to give ourselves a break and order from a local restaurant at least once each week. It’s nice to eat food someone else has cooked sometimes! Plus, it means pretty much no dishes. Below is this week’s inspiration, a mix of breakfast, lunch and dinner ideas to hopefully get you more excited about being in your kitchen.

Breakfast

Vegan Chocolate Chip Waffles, these are a great weekend treat!

Very Green Matcha Smoothie, get a little caffeine hit in your smoothie.

Lunch

Smashed Roast Chat Potato Salad, you can add any variety of greens to this.

Israeli Cous Cous, Corn, Zucchini and Haloumi Salad. There’s so much flavour in this delicious salad, it’s an exclusive recipe for Patreon followers. You can sign up to see it and everything else on offer!

Dinner

Lemon and Thyme Skillet Roasted Chicken, this is the only way I’ve roasted a chicken in the last 3 months, so easy and quick with the crispiest skin!

Balsamic Mushroom Fettucine with Whipped Roast Garlic Ricotta. Mushroom season is basically over but this dish makes the most of what’s available.

Crispy Satay Tofu with Coconut Rice and Cucumber and Avocado Salad, this is a really delicious combination.

Orange, Ginger and Spring Onion Salmon with Asian Greens. This is the perfect way to use spring greens.
