Crispy Chicken and Pickled Radish Lettuce Cups
   This is summer. Eating things out of crisp lettuce leaves and having lovely light suppers in the sun. Maybe with a glass of something delicious in the other hand. Like sparkling water with fresh mint – yeah that’s definitely what I was dreaming about;)
Easy Summer Baked Eggs
These baked eggs can be made from scratch in 30 minutes using fresh tomatoes, and what’s not summery about that? I love having baked eggs with sourdough toast to dip in but flat bread works really well too.
Meal Plans Week 91
All the folks over in the northern hemisphere are getting festive and planning Thanksgiving menus and in this neck of the woods Christmas is the next big one, which is a blessing because I really need some time to eat salads post holiday pre holiday season you know?
Spicy Cassarecce with Vodka, Basil and Parmesan
This recipe is an ode to Jon and Vinny’s in Los Angeles and their spicy fusilli dish. It’s my second dish in a row that was influenced by that meal, obsessed much? I actually meant to post them the other way around but my tired brain stuffed up so here we are. It is in no way their recipe it’s just similar in flavour and texture. You could totally use fusilli and I have done that before but at the end of the day I’m always going to choose cassarecce because it’s my favourite.
Gem Lettuce Salad with Chilli, Parmesan and Bread Crumbs
This salad is so simple and so good. Crisp green lettuce generously dressed in a creamy and spicy dressing and then covered in golden bread crumbs and freshly grated parmesan. This is another one inspired by eating at Jon and Vinny’s in LA – I was clearly obsessed with that meal. I’ve tried to keep the dressing lighter by making it yoghurt based and it’s still super delicious.
Meal Plans Week 90
Okay so you may or may not have noticed that I haven’t posted anything since last week’s meal plans. I had sort of run out of recipes to post while traveling as testing them is a little hard when I’m not in one spot for long, and I just wanted to really be laid back in this last week of my holiday. Plus it was my birthday week and I thought not pushing myself to write when I didn’t feel like it might be the nicest treat of all.
Meal Plans Week 89
And the holiday is almost over… I leave the US tomorrow to head to Auckland for a few days and then home before the next meal plans post. After the last week of eating out I’m enjoying being back at my sister’s and making some home cooked food. I basically ate anything I wanted in New Orleans and felt more than a little sluggish by the end of it! Worth it though;)
7 Ways With: Haloumi
I was tempted just to write ‘pan fry until golden and eat’ 7 times in this list and be done with it… but that would be failing to tell you all the things you can make more delicious by adding golden haloumi to them (air, mostly air). Okay seriously though this list will make you drool.
Roasted Capsicum and Cauliflower Panzanella Salad with Parmesan Mustard Dressing
This is an excellent clean out the fridge salad and a great way to use the ends of a loaf of bread. The golden crunchy bread, sweet roasted capsicum, refreshing cucumber and crispy cauliflower are a delicious combination and the dressing is really next level.
