Meal Plans Week 92

My salad filled days are trucking along nicely now and between that and lots of yummy seafood i’m really feeling a summer vibe. What do you love to eat at this time of year?

This weeks meal plans are going to be all about celebrating the delicious produce that’s around at the moment. Loads of zucchini, fresh sweet mango and crisp lettuce. I’m all about it.

Plan A

Day 1: Easy Summer Baked Eggs, sometime breakfast for dinner is the best way to go.

Day 2: Salmon, Zucchini and Potato Cakes with Avocado Sauce, literally everything I want right.

Day 3: Crispy Chicken and Pickled Radish Lettuce Cups, these are an amazing flavour and texture bomb.

Day 4: Soy and Chilli Beetroot Vegan Poke Bowl, this fresh and tasty bowl is full of flavour.

Day 5: Mango, Prawn and Avocado Noodle Salad with Satay Dressing, this noodle salad is full of my favourite summer meals and has the best salty sweet balance.

Plan B

Day 1: Easy Lentil Salad, this is going to be my work lunch this week for sure.

Day 2: Tofu and Ginger Miso Curry, always one of my favourite curries.

Day 3: Easy Summer Baked Eggs, perfect low effort food

Day 4: Sundried Tomato and Roast Capsicum Pesto Pasta, pesto pasta but with a red twist.

Day 5: Soy and Chilli Beetroot Vegan Poke Bowl, I love this vegan version of poke.

This weeks bonus? Mango, Banana and Coconut Smoothie Bowl is always a winner!
