Meal Plans Week 91

All the folks over in the northern hemisphere are getting festive and planning Thanksgiving menus and in this neck of the woods Christmas is the next big one, which is a blessing because I really need some time to eat salads post holiday pre holiday season you know?

But who am I kidding I’m also eating pasta with those salads. I’ve been eating very little meat though, perhaps after eating it more regularly while I was away my body is doing some sort of natural rebalance thing? I’m just going to go with it. I want to transition into it only being an occasional thing in my life as I know that realistically I’m not going to become a vegetarian but I do think eating less meat is vital for the health of the Earth.

So with that in mind this weeks recipes are only going to feature one meat dish. Yep, just the one. I only usually have 2 in there and 1 seafood dish on the omnivore plan so I feel that we’re ready for this to be a thing once a month right?

Those plans…

Plan A

Day 1: This Spicy Casarecce Pasta with vodka, basil and parmesan is an actual dream.

Day 2: Pearl Barley, Asparagus and Zucchini Salad -this salad celebrates spring ingredients  – yum.

Day 3: One Pan Chicken Thighs with Mozzarella, Tomato, Chickpeas and Basil. Serve it with this killer Gem lettuce, breadcrumb and parmesan salad on the side.

Day 4: Mexican Rainbow Salad, this colourful and filling salad is great by itself and then you can eat any leftovers with below options!

Day 5: Chipotle Salmon Tacos, these tacos sound like an interesting mix but that mango salsa balances everything.

Plan B

Day 1: Quick and Easy Vegetarian Chilli, is awesome to take to work for lunches too.

Day 2: Mexican Rainbow Salad, all the colours make an appearance in this salad.

Day 3: Spicy Casarecce Pasta with vodka, basil and parmesan, my favourite kind of pasta. Serve it with a big green salad on the side.

Day 4: Pearl Barley, Asparagus and Zucchini Salad, a yummy spring salad.

Day 5: Fried Tempeh, Black Rice and Avocado Bowl – this is super filling and has great crunchy texture from the tempeh.

And this week’s bonus? I think it’s time to start getting the frozen treats happening! Dark Chocolate and Chia Nice Cream Popsicles please!
