Meal Plans Week 130

Unsurprisingly I’m a day late in posting these! I had such a busy weekend celebrating one amazing friend’s 30th birthday with a grazing feast in the park a and then wedding dress shopping with a different friend the following day. It was a lovely weekend but with very little free time.

My new motto should be better late then never… here are some sensational ideas for your week ahead.

Plan A

Day 1: Sticky Ginger Chicken Meatball Bahn Mi, I love Bahn mi and you can have these in mini size or as a big one.

Day 2: Zucchini and Ricotta Stuffed Pasta Shells, a spring time pasta bake.

Day 3: Israeli Cous Cous Salad, my life wife’s favourite. everyone should have a life wife, that best friend you’re basically married to.

Day 4: Middle Eastern Vegetarian Nachos, I love love love these.

Day 5: Pork Rack with roasted cauliflower and fennel, this is easy to do and will wow your mates.

Plan B

Day 1: Lentil and Haloumi Salad, great for work lunches too.

Day 2: Cauliflower Flatbread, balsamic glaze makes everything yum.

Day 3: Middle Eastern Vegetarian Nachos. The mushrooms I these are my new favourite thing.

Day 4: Zucchini and Ricotta Stuffed Pasta Shells, a creamy vegetarian pasta bake.

Day 5: Pearl Barley, Asparagus and Zucchini Salad. Live that grain Salad life.

And this weeks bonus had to be these almond and dark chocolate cookies.
