Meal Plans Week 57

I’m usually super organised with my posts but this week not so much. I’m actually finishing writing this from bed on a Sunday morning. I really should have pushed ‘publish’ an hour ago but things don’t always work out perfectly!

Luckily you’re all an understanding bunch and as long as the meal plans get out into the world everything is fiiiine. What’s not fine right now is my stomach after eating an intense amount of Greek food last night. Reminder to self, the banquet is never neccesary. Never.

In other exciting non sore stomach realted news, I found a new food show that I love! It’s David Chang’s Netflix documentary ‘Ugly Delicious’ and it’s such a beautiful collection of food stories. They’re fun and there’s so much to learn and I’m absolutely loving it. The journey f food and chefs that it explores is so well done. If you loved shows like Chefs Table and Cooked this one is for you.

Now for the meal plans, we’re having a little bit of a trip around the globe this week. Enjoy your travels;)

Plan A

Day 1: Vegetarian Pad Thai, the roasted peanuts in this dish are essential!

Day 2: Easy Salmon and Poached Egg Pasta, simple and delicious low effort food!

Day 3: Vegetarian Bibimbap, bibimbap consists of lots of little dishes in your bowl so there’s some prep work but it’s totally worth the effort for this level of yum. Make extra for lunches!

Day 4: Ginger and Tamari Chicken Rice Paper Rolls, just look at those colours!

Day 5: Crispy Prawn Souvlaki, ending the week right.

Plan B

Day 1: Simple Vegan Creamy Mushroom Fettucine, a really satisfying vegan pasta, you won’t miss the cheese!

Day 2: Vegetarian Pad Thai Easy noodle dishes are where it’s at this week!

Day 3: Ultimate Rainbow Buddha Bowl, the colours in this version are amazing but this recipe has tips for how to create your own ideal buddha bowl!

Day 4: Vegetarian Bibimbap Less simple than some of the other dishes and sort of like a rainbow bowl in a way but served hot!

Day 5: Crispy Tofu with Broccolini and a Miso Broth, this is my current favourite tofu dish because it’s so simple and so comforting.

This weeks bonus has to be a skillet cookie cos it’s been a while and it’s just too good!
