Meal Plans Week 105

This week has been a struggle from one illness to the next but I think I’m finally coming out of it! Could not have been a better time for a long weekend. I have been lax on the eating and cooking because of said illness but got right back into this weekend so I have yummy things coming at you next week.

The week ahead is also looking like another hot one so I’m thinking salads and quick things for dinner. I think that’s basically been my vibe for the last 4 months but hey, it’s working so I’m going to keep going with it.

Plan A

Day 1: Lentil and Haloumi Salad with a pesto dressing. This filling and delicious salad makes enough for lunch prep for the next 3 days too. Win.

Day 2: Herb Crusted Salmon with a shaved Asparagus, Fennel and Broad Bean Salad. Such a quick and delicious dinner.

Day 3: Corn, Avocado, Manchego and Quinoa Salad. This salad tastes like summer and I want to hang on to summer for as long as possible.

Day 4: Prawn Pasta with Chilli and Blistered Cherry Tomatoes, can’t have a week without pasta now can I?

Day 5: Chicken Salad with Creamy Cashew and Herb Mayo. This mayo also doubles as an amazing spread for your toast!

Plan B

Day 1: Quick Broccoli, Lemon and Almond Pasta, this is such a low effort dinner and full of greens.

Day 2: Corn, Avocado, Manchego and Quinoa Salad. The flavours in this salad dance across your mouth, so good.

Day 3: Extra Green Saag Paneer. Is it obvious I’m trying to amp up my vegetable intake this week? This dish will definitely help you do that! Not traditional but definitely delicious.

Day 4: Lentil and Haloumi Salad with a pesto dressing. Full of vegetarian protein options to keep you full.

Day 5: Quick Vegetarian Enchiladas, way quicker than the regular enchiladas and can be completely gluten free.

I snuck into my housemates packet of mint slices this week so I think it’s time I make these choc mint bliss balls to satisfy those cravings.
