Meal Plans Week 84

Hello from sunny California! It’s so nice to be in summer again, I’m spending loads of time soaking up the sunshine in my sister’s backyard while hanging with nieces and nephew. It’s been lovely.

I’ve also been werkin’ because I was not very organised before I left! Thus, it’s Saturday morning the kids are getting ready for soccer and I’m finishing off this post for you. Lucky me, lucky you.

Oh and I realised I forgot to do a September post on my live a more environmentally friendly life stuff. Last month I switched to a earth friendlier hair dye and started a compost. I have not switched deodorants to a plastic free option yet as I was given a free one. This month my goals are travel focused: Not buying bottled water while traveling (when it’s possible to drink the local water like in the USA), I’ve brought a drink bottle with me for the first time. Using my keep cup while travelling – I never usually travel with extra ‘stuff’. Walking rather than taking Ubers as often as possible -this one is way harder when kids are involved and also doesn’t make up for my carbon foot print from plane travel but hey. I’m trying right?

Back to the meal plans: I’m thinking a Californian influenced menu for you this week, so think lots of health bowls, burgers, tacos and burritos. Enjoy!

Plan A

Day 1: Mushroom and Avocado Burritos with Crispy Cheese, the crispy cheese seal is a game changer.

Day 2: Ponzu Prawn Black Rice Poke Bowl, ponzu and seafood is a great mix.

Day 3: Crispy Chicken Burgers with Parmesan Slaw and Spicy Mayo, I’ve eaten 2 burgers this week so figured you should too.

Day 4: Chipotle Salmon Tacos with Mango Salsa, these fresh and light Salmon tacos are a yummy mix of flavours.

Day 5: Easy Sweet Potato Buddha Bowl with Maple Tahini Dressing, This bowl can be made with any vegetables you have left in the fridge.

Plan B

Day 1: Haloumi Tacos – the best vego tacos ever.

Day 2: Veggie burgers, these patties are full of flavour.

Day 3: Easy Sweet Potato Buddha Bowl with Maple Tahini Dressing, a great lunch option too.

Day 4: Soy and Chilli Beetroot Vegan ‘Poke’ Bowl, who said poke needs to involve fish? Someone, probably, but here we are.

Day 5:  Mushroom and Avocado Burritos with Crispy Cheese, a yummy veggie filled burrito.

This week’s bonus:A simple green smoothie  – mostly for me to balance out my burger habit…

Now I’m getting back to my holiday:)
