Meal Plans Week 100

Yep. 100 weeks of meal plans. That’s a whole lot of meal plans for you beautiful humans to choose from. And considering each post contains two plans that’s 200 plans for you! Aren’t you lucky?

I’m still on a salad bent at the moment and they will once again feature heavily. It’s these 35 celsius plus days are a hiller and sometimes all I want to eat are salads and fruit. What’s your go to hot summer’s night meal?

I’m also hot right now so let’s get to it, the plans:

Plan A

Day 1: Chicken Salad with a Creamy Cashew and Herb Mayo. This ayo is so good you’ll want to snack on it with vegetable sticks to dip in.

Day 2: Miso Caramelised Eggplant in Lettuce Cups. This sticky eggplant is meaty and moreish.

Day 3: Zucchini, Corn, Basil and Goats Curd Pasta. Full of summer flavours and that goats curd makes and amazing sauce.

Day 4: Spiced Mince with Green Beans and Hummus. Still one of my favourite dishes.

Day 5: Matcha Rice Bowls with Steamed Salmon and Pickled Ginger Salad. Fresh and delicious.

Plan B

Day 1: Zucchini, Corn, Basil and Goats Curd Pasta, Monday’s can be hard. End it with some pasta.

Day 2: Crispy Chickpea Bowl with Slaw and Creamy Spinach Dressing. You could swap the dressing for the cashew and herb mayo in the first recipe in Plan A.

Day 3: Miso Caramelised Eggplant in Lettuce Cups, I love anything in a lettuce cup.

Day 4: Cauliflower and Hummus Pita Pockets. The most delicious little pita filling.

Day 5: Chilli Sesame Crispy Tofu Bun Bowls. These bowls pack loads of veg and loads of flavour.
