Meal Plans Week 86

I think I’m about half way through my holiday now, and this means it’s road trip time! For the next week I’ll be joining a couple of friends and exploring Utah and Colorado before ending up in Texas for a night in Houston. But no that does not mean this post is going to be full of bbq food… we’re keeping it light and fresh in this neck of the woods.

Mostly as this is going to serve as my healthy but tasty wish list while I eat burgers, and no that’s not a complaint! I’ll be doing loads of hiking too and life is all about balance. Like today I ate too much trail mix so took myself for a run/walk thing up some serious hills to balance it, that’s how exercise works right?! Ha I wish, but it made me feel more energised so that’s something.

Now for those meal plans, there’s lots of green to be seen this week!

Plan A

Day 1: Cauliflower Bocconcini and Balsamic Glaze Flat Bread, you can use pizza bases instead if that’s easier!

Day 2: Chicken and Mushroom Larb Style Lettuce Cups, I love this recipe and my house mate makes it too now which is just the biggest compliment.

Day 3: Summer Chickpea Salad with Feta, the perfect simple chickpea salad and there’s a whole lot of serving ideas in the post!

Day 4: Fish Saag with All the Extra Greens, this curry is mild and simple to make.

Day 5: Kale Lentil and Pomegranate Salad and Lemon, Parsley and Cumin Barbecued Chicken

Plan B

Day 1: Skillet Lasagne with Ricotta and Greens, i love the simplicity of a skillet free form ‘lasagne’.

Day 2: Silken Tofu Bowl with Spicy Mushroom Sauce, reminiscent of mapo tofu!

Day 3: Kale Lentil and Pomegranate Salad, Serve this with some soft boiled eggs.

Day 4:Cauliflower Bocconcini and Balsamic Glaze Flat Bread, this might seem like an unusual combo but it’s so yummy together.

Day 5: Summer Chickpea Salad with Feta, so quick and easy to make.

And this weeks bonus recipe? Roasted Almond Cookie Dough Bliss Balls because my sweet tooth is getting out of control over here!
