7 Ways With: Chickpeas

In case you hadn’t noticed I’m super into legumes. So this week’s 7 Ways With post is dedicated to… Chickpeas! Chickpeas are the base of hummus and hummus is life and super easy to make yourself, thus you can expect some hummus in the mix below.

But it’s by no means the only thing that chickpeas are good for! I use them in curries, salads, and even in sweet things. You should check out this cookie dough dip over on Chocolate Covered Katie too.

Chickpeas are an excellent source of fibre and protein and this means they’ll keep you full for ages. That’s why I love snacking on hummus as it’s the kind of snack that actually fills up up. I also use it as a carb replacement for the same reason, and pile meat, veggies etc on top.

Now for 7 Ways With Chickpeas

Fragrant Dahl with Spinach, Zucchini and Chickpeas – an easy dahl full of spring vegetables

Hummus with Slow Roasted Tomato and Pomegranate Salad – hummus topped with a sweet and sticky salad.

Prawns and Chickpeas with Paprika and Saffron – this delicate dish has an incredible broth that is screaming to be mopped up with some crusty sourdough.

Cauliflower and Chickpea Baked Eggs, Baked Eggs don’t need any tomato.

One Pan Chicken Thighs with Mozzarella, Chickpeas, Tomato and Basil – one pot dishes are the perfect solution to my week night needs.

Vegetable and Chickpea Soup with a Herb Pesto, not going to lie, the pesto makes this soup.

Hummus with Grilled Chicken, Herb and Lemon Salad, I often eat hummus like this – just topped with delicious things – and it’s such a revelation.
