7 Ways With: Lemons

I have been all over the place this week and too busy to do the final test on a whole lot fo new recipes so i cannot share them with you yet… The business has been due to my other job, travel prep and my brother’ s bubba and partner arriving in the country and me being all about those things and not making enough time for this thing! And that’s okay, right?

When I try to do too much at once a ball is always going to drop and this week I chose to drop the ball of sharing a second recipe, and I’m trying to be totally okay with that. Not reaching deadlines, even those I set for myself, creates a knot of anxiety in my chest and stomach so I don’t let them slide very often! You should have seen me at school with due dates, I never would have dreamed of handing something in late – I’m still baffled when my students do this! I mean how can you proceed knowing you have that hanging over you? I guess I managed that time I didn’t do my tax for two years and just avoided thinking about it to avoid that knot of anxiety. But I’m not going to let this week’s 7 Ways With post slip by!

Now to something that just makes me happy: Lemons. I am obsessed. I dream of being the proud owner of a lemon tree that is weighed down with it’s bright yellow bounty. Mostly because I go through soooooo many lemons each week. I mena, I eat a lot of hummus and salad and those almost always involve lemon for me.

I like to use the zest off every lemon I squeeze (as often as possible) as that zest is so full of flavour. The following recipes are some of my favourite ways to use up your own bounty of lemons. Enjoy.

Roast Potatoes with Fennel and Lemon, the lemon in this recipe get’s sticky and caramelised but isn’t cooked for long enough to get bitter at all.

Farfalle with Asparagus, Caramelised Leeks and lemon. Pasta and lemon are always good together it adds a light, fresh touch to this dish.

Hummus with Grilled Chicken, Herb and Lemon Salad, all the freshness of a lemon laced salad to top my favourite creamy hummus.

Lemon Crème Brûlée Bars – these caramel looking bars are laced with lemony goodness.

Roasted Cauliflower and Kale Salad with Lemony Zucchini and Haloumi, Lemon and zucchini are almost as good together as lemon and haloumi.

Strawberry, Lemon and Basil Friands, it really doesn’t get much better than these little morsels of joy.

Roasted Snapper and Fennel with Chilli, Lemon and a Cashew Tartar. The creamy tartar sauce is topped with this super easy whole roasted snapper filled with fragrant lemon.
