I never used to be an eggplant fan. It was too often, butter, soggy or watery. I’ve learnt that when it’s cooked in certain ways it is so delicious. This is one of those ways, in this little recipe the eggplant becomes meaty and laden with umami rich flavours from the miso paste. The crisp lettuce cups are a perfect foil to this salty richness.
CHOC COCONUT NOUGAT BITES
The Summer Roll. A delicious nutty, chocolate, coconut, nougat treat. A treat that I’ve recreated in a slightly more nutritious manner… it’s made with nutrient dense seeds, nuts and coconut, far less sugar (just some maple syrup and the chocolate), and contains no wheat or dairy. Also tastes like a dream.
BARBECUED BROCCOLI WITH ALMOND AND CHILLI
MISO AND MINT BROAD BEAN TOAST
Broad beans are delicious, and if you’re screwing up your face right now maybe you just haven’t eaten fresh, double podded broad beans before? Because if you haven’t you are missing out on some serious yum. Plus things on toast are great. Thus this recipe has two great things going for it.
SNACK YOUR WAY TO 5 VEG A DAY
You’ve probably realised by now that I’m a little obsessed with getting in my veg each day. I think it helps keep my diet balanced and my body happy. I find that having vegetable based snacks really helps me do this. This post contains 4 snack ideas and a new recipe for some yummy vegetable crackers, as well as handy information on how many serves of veg these snacks will give you.
THE HEALTHIEST CHOCOLATE PUDDING YOU’LL EVER EAT
How good does this look? What if I told you that it was healthy enough to eat for breakfast – a main meal – and tasty enough to enjoy as a treat? What if I said it would count towards your veg servings for the day? Yep. And it has no avocado in it, and the texture’s a bit like mousse/ a bit like pudding and can be frozen into paddle pop type things. Oh yeah, it’s vegan, gluten free and refined sugar free too. Want to know more?
VERMICELLI NOODLE SALAD
This salad makes a delicious dinner when the weather gets warm and an easy lunch. You can make it the day ahead and take it to work. As you’ll see it’s seriously simple to make, simple food is where it’s at for week day lunches.
STRAWBERRY AND VANILLA GRANITA
This is a refreshing, easy and nutritious summer dessert. Or snack for that matter. It’s dairy, gluten and sugar free and maximises that fresh strawberry flavour. That flavour is enhanced by both the freshness of lime and the lingering vanilla flavour. You could leave the vanilla out but I think it’s what takes this to the next level, from frozen snack to dessert.
BANANA CHOCOLATE MARBLED SMOOTHIE
This smoothie is both tasty and pretty. And full of the good stuff of course! You can use your preferred milk but almond or oat would both be delicious choices. The marbled effect is easy to do and makes for a pretty finish. We eat with our eyes first and I find the nice my food looks the more mindful I am when eating it.
SPICED PUMPKIN AND SWEET POTATO SOUP
Winter means soup. Lots of root vegetables are in abundance and you pretty much want to fill your body with heat at this time of the year, and soup goes well with both those things. This soup uses sweet potato, pumpkin, fragrant spices and a little coconut to warm and nourish you from the inside out.
