Mmmmmm miso paste. You are a fermented joy of salty stickiness and depth of flavour. And you make these soba noodles delicious. The slippery noodles, still crunchy wilted greens and crispy bits of roasted cauliflower mean this noodle dish has a lot of yum going on.
STICKY, SLOW ROASTED SWEET POTATO
This is the best way to eat sweet potato. Hands down. It’s even better than the loaded fries recipe I’ll be posting next week. Maybe. Okay, not better, just different. Don’t make me choose between types of potatoes, that’s mean! I love them all with equal abandon. This particular rendition of sweet potato is unctuous (what a word amirite?!), sticky, glazed, sweet and salty goodness. Get ready to learn that patience is a virtue because it lands you glorious things like this.

These are freakin’ delicious. Like, ridiculous. I almost made myself sick because I couldn’t stop eating them. Could have also been because I licked some of the drizzled chocolate off the board…hmmm. Plus they are gluten free, dairy free and lower in sugar than the cookie they’re impersonating.
COCONUT CURRY NOODLE SALAD WITH CORIANDER PEANUT PESTO
I love the mix of soba noodles and vegetable noodles in this salad. The soba noodles are filling and if you use the buckwheat variety, some what nutty, the xoodles are tender and fresh and the carrot noodles (coodles?! nope, probably not) keep their crunchy. They’re all then dressed in the delicious creamy dressing and finished off with more vegetables and that vibrant pesto. Yum.
COCONUT ICE SMOOTHIE
How pretty does this look?! And it tastes so so good. This could be a post run pick me up or breakfast, the smoothie is full of fruit and chia seeds for an amino acid boost. You could also add some protein powder if you’re that way inclined.
STICKY MUSHROOMS WITH GREEN BEANS AND HUMMUS
This recipe is a vegetarian version of this delightful little number. Thus the similar looking dish/sounding recipe title. I am clearly very creative. But the caramelised mushrooms with their spicy undertones are the perfect replacement for the earlier recipe’s crispy, fragrant mince.

I love Weiss bars. My favourite ones are the chocolate and coconut ones you can only by in boxes of four at the supermarket. The fact that these only come in fours is never a problem, they’re delicious I want four, it’s that I can never get them when I most want an icey pole, on the way home from beach for example when you stop at the servo or general store. First world problems right? Well this recipe solves none of those problems, it makes 4, isn’t stocked at my local service station and I can’t find it at the beach. However, it is a slightly ‘healthier’ version and I don’t need to leave the house on a 41 degree day to get one.
