Meal Plans Week 65

I feel like the Earth is speaking to us at the moment and yelling: global warming is a real thing! 24 degrees celsius in May in Melbourne is super nice and super scary, but in typical Melbourne fashion it’s back to cool weather vibes the next day and also in typical Melbourne fashion everyone will be talking about it. Apparently we’re obsessed with talking about our weather, and I know I talk about it a lot but we’re all obsessed because it’s cray. And the weather affects what I want to eat: self -saucing pudding one day and seafood the next. The seafood was in burger form this week though and it was AMAZING.

Sourdough Crumbed Fish Burger

This recipe is a little bit naughty, a little bit nice and a whole lot of yum. I love sourdough bread and using it fresh to crumb fish creates the most delicate crisp coating. The fennel seeds and slaw add freshness to the crispy fish. Perfect.

Pumpkin and Spinach Skillet Lasagne with Basil Vinaigrette

I posted a recipe for a skillet lasagne last year but this one is quite different, it’s more saucy with very different flavours but the same thrown together easy cheats lasagne appeal. This isn’t really lasagne. It just uses the same sheets and includes a sort of bechamel and the concept of layers. However the layers in this are far more free form and relaxed and way quicker!
