Meal Plans Week 65

I feel like the Earth is speaking to us at the moment and yelling: global warming is a real thing! 24 degrees celsius in May in Melbourne is super nice and super scary, but in typical Melbourne fashion it’s back to cool weather vibes the next day and also in typical Melbourne fashion everyone will be talking about it. Apparently we’re obsessed with talking about our weather, and I know I talk about it a lot but we’re all obsessed because it’s cray. And the weather affects what I want to eat: self -saucing pudding one day and seafood the next. The seafood was in burger form this week though and it was AMAZING.

Other things that I can’t stop talking about at the moment: The Handmaid’s Tale is back! I’m loving curling up on the couch and getting engrossed in this show, and then pondering it for at least 24 hours afterwards. As my housemate said, it’s not exactly a joy to watch. It’s emotionally draining, a little depressing and super heavy. But I like my shows either dark and twisty or sarcastic and dry so this is my kind of show. I’m also enjoying Westworld at the moment and then a sprinkle of cooking shows to lighten the mix! What are you watching?

I’m also listening to the High Low weekly and telling all my gal pals to get involved, it’s a UK based show with two journalists discussing both high and low brow current affairs and I love it. It’s exactly how I chat with my nearest and dearest: flitting from  food waste and Australia’s love affair with single use plastics to which couples from Bachelor in Paradise made it. I have a load of time for podcasts because I don’t drive (I just hate it, I know this is weird and potentially due to the fact I get car sick in cars and just don’t love them in general – probs need to get over this at some point) and walk everywhere I can. What I consider a reasonable distance for walking is apparently quite different to other people! So please send me your podcast recommendations! I like true crime, current affairs, psychology and food based podcasts or just good stories like This American Life:)

These weekly meal plan posts occasionally turn into my chance to write about whatever is going on in my life, or whatever is on my mind so if you’ve made it this far through – THANK YOU!Now I’ll get to the point: meal plans. Rememeber these aren’t meant as a nutritional guide (I’m not a nutritionist!) just as ideas to get you cooking at home this week (the cooking and ideas part are my expertise). Plan A has got double seafood this week and both plans have got pasta and curry, enjoy!

Plan A

Day 1: Cauliflower and Potato Massaman Curry, fragrant and warming and leftovers make for such a yummy lunch – I love that curry is one of those things that develop more flavour after cooling and reheating.

Day 2: Pesto Baked Salmon with Pesto, Broccoli and Baby Potato Salad, I created these recipes when I was doing the Gut Makeover so had the potato salad cold (resistant starch in the cooled potatoes) but it could also be served warm.

Day 3: Pumpkin and Spinach Skillet Lasagne with Basil Vinaigrette: the vinaigrette takes this cheats free form lasange to a whole other level delivering a huge punch of flavour.

Day 4: Chicken Fried Rice: this fried rice is super easy and so fragrant and delicious.

Day 5: Sourdough Crumbed Fish Burger, I made these with King George Whiting and it was soooo good!

 

Plan B

Day 1: Pumpkin and Spinach Skillet Lasagne with Basil Vinaigrette: there’s suggestions in the recipe to make this a vegan meal too. If you’re a stronger person than me and have given up cheese.

Day 2: Black Bean and Aged Cheddar stuffed Sweet Potatoes, such a delicious and filling vegetarian option.

Day 3: Cauliflower and Potato Massaman Curry this vegan curry is warm and comforting for a mid week pick me up.

Day 4: Silken Tofu Bowl with Spicy Mushroom Sauce, so many delightful textures and the heat of the mushrooms is such a nice contrast with the tofu.

Day 5: Thai Red Curry Pumpkin Soup, with added lentils for a more rounded meal!

And this weeks bonus: Make this wholesome version of chocolate self saucing pudding and indulge with a scoop of vanilla ice cream!
