Meal Plans Week 63

Ooft this week has been full of food. This most likely is unsurprising news because I write a food blog but there’s been a lot of non food blog related food and my body is overwhelmed with cake. The week ahead is going to be full of vegetables and seafood that’s for sure.

The vegetables part will be easy because some friends and I have started a soup club! Each week two of us make enough soup for everyone to get a serve and then we trade on Sunday or Monday night and you get two new soups to try. I highly recommend it. This week I’m making a garam masala spice sweet potato and carrot soup, I’ll post the recipe during the week for you.

Oh this week also involved a really delicious breakfast at Field Black for my housemate Sel’s birthday, we tried the breakfast gnocchi, the scrambled eggs and the cauliflower croquettes (one guess at which one I ordered ha) and they were all AMAZING so if you’re a Northsider (in Melbourne!) I’d highly recommend going.

If you’re looking for other healthy recipes there’s a new baked salmon recipe of mine sitting pretty over on Red Island Extra Virgin Olive Oil’s website. It’s super easy to make and the perfect mid week meal. Or make the recipe below, it’s another favourite.

Have a lovely week and I hope it’s full of cake;)

Plan A

Day 1: Pumpkin Dahl with Tomato and Spinach, an excellent meat free Monday choice!

Day 2: Salmon Soba Bowls with Miso Ginger Broth, I’m definitely in need of this bowl of goodness.

Day 3: Lamb, Eggplant and Almond Curry, one of my favourite curries, simple to make and full of flavour.

Day 4: Israeli Couscous Salad with Pomegranate and Sumac Prawns – a new favourite quick to throw together salad.

Day 5: Sticky Lemongrass Chicken Thighs on crispy lettuce served with a side of Szechuan and Penaut Green Beans.

Plan B

Day 1: Roasted Za’atar Pumpkin with Blue Cheese Dressing, serve this on herbed quinoa.

Day 2: Eggplant and Mushroom Rigatoni Ragu, because pasta is always a good idea.

Day 3: Pumpkin Dahl with Tomato and Spinach, will warm you right up.

Day 4: Moroccan Spiced Chickpea and Tomato Soup couldn’t not include a soup after chatting about soup club!

Day 5: Mushroom and Avocado Burrito with Crispy cheese, this is my favourite burrito I’ve ever made. The crispy cheese takes it to the next level.

This weeks bonus, this Caramelised Banana and Coconut Porridge is going to make an appearance this week!
