I am exhausted this week! A full week of social activity (aka in person teaching) has left me zonked and having a much needed recharge this weekend. Thus I’m into cooking the easiest things possible, and that’s reflected in the below ideas!

Breakfast

Mango, Banana and Coconut Smoothie tropical deliciousness to start the day!

Breakfast Tacos with Nectarine and Avocado Salsa. These are so fresh and delicious.

Lunch

Lentil and Haloumi Salad, full of green things and golden haloumi

Corn, Avocado and Manchego Quinoa Salad. Pretty colours and flavours.

Dinner

Peanut Curry Noodles with Ginger and Chicken Meatballs, I’m so into this deliciousness right now.

Grilled Eggplant with Hummus and Yoghurt Flatbread, I am hummus obsessed.

Spicy Cassarecce with Vodka, Basil and Parmesan. This is so tasty and quick pasta dishes are my jam.

Herb Crusted Salmon with a Shaved Asparagus, Fennel and Broad Bean Salad. You could make this with any firm fleshed fish.

Dessert

Triple Chocolate Coconut Slice. You deserve it.
