This weekend has been so lovely, I never thought that sitting in a park with some friends would mean so much to me. Being in Melbourne’s parks at the moment remind me of summers in London, such a festive vibe.

It’s also meant that I have way too many cheese boards over the last week, so I’m going to have to start making something other than hummus to bring to the park.

Breakfast

Potato Waffles with Pea Puree and Horseradish Yoghurt, the  perfect weekend breakfast for Spring.

5 Ingredient Get Your Glow on Blueberry Smoothie, this is delicious and the best light breakfast.

Lunch

Cauliflower, Parmesan and Thyme Mini Pies these little pockets are the perfect thing to take to the park!

Baked Sweet Potato Chips with Roasted Garlic Guacamole, I’m loving light lunches and shred snacks like this at the moment.

Dinner

Quick Sausage and Mushroom Ragu with Gnocchi, I’ve included the recipe I use to make gnocchi but you could easily use store bought if gnocchi making isn’t your idea of fun.

Hummus with Spring Greens, great with flat bread or as part of a picnic. This recipe is a Patreon exclusive.

Quick Vegetarian Enchiladas, a super easy meat free meal.

Chicken Salad with Creamy Cashew and Herb Mayo, it’s salad season again:)
