VERY GREEN MATCHA SMOOTHIE

This is a green smoothie that packs a punch in the antioxidant and good for you departments. There’s matcha for those antioxidants, a good dose of omega 3’s, potassium, vitamins A, C and K to name a few, fibre, protein it’s like a powerhouse. I love serving it in a bowl over some muesli for hidden crunch and topped with fruit for contrasting flavours. And because it looks pretty tbh.

You don’t have to get all pretty and fancy about it and if you don’t see the point in smoothie bowls then I get it, just pour this into a glass and enjoy the yum.

So where is this smoothie getting all that goodness from? Well the matcha is fairly obvious but the other stuff comes from the banana (also sweetens it), kale, chia and avocado. The avocado and banana also make it super thick and creamy so it’s perfect for a smoothie bowl. If you want it thinner then just add some more milk or water.

I’ve used almond, coconut, and dairy milk in this smoothie before and all are great. The almond and coconut are a little better as they add sweetness too which balances out the kale bitterness. I’ve also thrown pineapple into the mix when I’ve had it on hand (1/3 cup, frozen) or kiwi fruit and that’s been yummy too.

I’m a big fan of having some muesli on the bottom of the smoothie bowl as then you get a little crunch as you dig in. If you don’t see the point in smoothie bowls then try this, it’s like having yoghurt and muesli but with way more flavour.

If you’re in a hurry in the morning then pop everything but the milk in a little freezer bag and freeze it. Make a few at the same time then just empty into your blender in the morning, add the milk or kefir (if you want some extra gut goodness) and you have breakfast at the push of a button.

Side bar: The yellow dots in my picture are bee pollen I was gifted some and love it, plus for styling itl ooks pretty but flavour and texture wise you don’t need to bother.

Serves 1

Ingredients

1 frozen banana, frozen in chunks

1 handful of kale, loosely packed and washed, no stalk (add less if you’re not usually into kale, can replace with baby spinach)

1 Tbs chia seeds

1.5 Tbs desiccated coconut

1/4 avocado

1 heaped tsp matcha powder

1/4 tsp vanilla extract

2/3 cup coconut, almond or dairy milk OR  replace with 1/2 cup kefir and 3 Tbs water

To serve: 1/3 cup muesli and fresh fruit (berries work well – especially the ridiculous kiwi berries pictured!)

Directions

Place all ingredients in your blender. Blend until smooth and creamy. If it’s too thick you can add a little more milk or  water. Drink as is or…

Place muesli in the bottom of a bowl, top with smoothie, scatter with fruit.

Variation: replace the vanilla with mint extract if your into mint and matcha as a combo.
