Meal Plans 28

It’s been a weekend of delicious food and binge watching Grey’s anatomy, thanks to the near constant rain! Looking forward to making the following things next week…

I’ve been reintroducing foods this week and it’s gone well… as long as I have at least one grain free meal a day! A grain free day helps my digestion too. I’m also enjoying eating more vegetarian food:)

Breakfast

Now that I’m having a little caffeine again, this very green matcha smoothie is on my list.

Chocolate and Coconut Porridge is also on the agenda!

Lunch

Roasted Tomato and Red Pepper Tortilla Soup needs to happen. Maybe with a quesadilla or standard grilled cheese.

Cauliflower and Chickpea Curry is delicious and easy.

Dinner

Mushroom ‘Carnitas’ Tacos with Vegan Lime Crema.

 

Rice Noodle Bowls with Peanut Sauce and Tofu Sesame Schnitzel Strips because I can eat tofu again.

Chicken, Leek and Sundried Tomato Pasta bake is easy and delightful.

Salmon and Mushroom Ramen with a Ponzu Broth.
