It’s school holidays for me! Yay! This also means way more time to recipe test so more re pies coming your way. In the mean time, scroll down for some weekly meal inspiration.

I can’t wait to spend more time in the kitchen, I hope the following ideas make you want to spend some time in there too.

Breakfast

Breakfast Tacos with Red Papaya Salsa, you can use and tropical or stone fruit in these and if you want to keep it vegan replace the eggs with tofu scramble or sauté some chickpeas with the potatoes.

Strawberry and Vanilla Bean Porridge, simple and delicious.

Lunch

Vegetable and Chickpea Soup with Herb Pesto, delicious, filling and a great way to clean out any leftover vegetables and herbs in your fridge.

Roast Pumpkin, Walnut and Pearl Couscous Salad, yummy warm or cold.

Dinner

Balsamic Mushroom Fettucine with Whipped Roast Garlic Ricotta. Yummy and all fancy looking!

Roasted Snapper and Fennel with Chilli, Lemon and a Cashew Tartar, this looks super impressive but is very easy to do!

Bok Choy and Pork Soba Noodle Salad, easy, quick and delicious.

Turkey Meatballs with Chermoula and Cauliflower Puree. The perfect winter warmer.

Dessert

Banoffee Crumble, caramel, banana, oats and coconut. What’s dream.
