Meal Plans 21

I can’t believe I’m a day late on these, especially when I was all excited about sharing them. But better late than never? Recipe testing is a little slow at the moment because my oven has farmed it and I’m waiting on the landlord to fix it… joys of renting right?

But that doesn’t meant I can’t included oven centric recipes in this round up… you all still have kitchen’s that work right?! Oh I hope so.

Breakfast

Miso Butter Enoki Mushrooms on sourdough. You can use olive oil or a plant based butter alternative in this and any type of finely sliced mushroom – so yummy.

Super Green Middle Eastern Breakfast Bowl, you can replace the egg and yoghurt with hummus if you want to keep things plant based.

Lunch

Pumpkin Dahl with Tomato and Spinach, the perfect batch cook meal.

Cumin Spiced Mushroom Crispy Rice Bowl, so much delicious flavour and texture.

Dinner

Vegetarian Lasagna with and Eggplant and Mushroom Ragu, the main reason I want a working oven again!

Salmon Soba Bowls with Miso Broth, the perfect winter warmer.

Spiced Mince with Green Beans and Hummus, and old favourite.

Vegetarian Tikka Masala, comfort food please.

Dessert

Double Chocolate Banana Bread, oh how I wish I had an oven that worked.
