Meal Plans 15

Life is changing again this week in Melbourne with school starting back for senior students and teachers. The end of working from home is near for some of us! Although I’ll always be working from home in some sense I will be heading back to school for the first time in months this week. With that in mind I’m going to include some easy lunch options and quick dinner options to help everyone adjust!

Even if you’re still at home, fuss free dinners are what you crave some nights right? I love cooking but I don’t feel like doing it every night. That’s why I usually have a freezer stocked with dumplings, leftover curry, dahl and pasta bakes that can be ready in moments.

Breakfast

Banana bread oats need to happen this week, they’re easy and satisfying.

Sundays are for baking sourdough so the start of the week will be full of avocado toast.

Lunch

Garam Masala Spiced Sweet Potato Soup. Delicious with toast or flat bread to dip in.

Miso Roasted Cauliflower and Pumpkin Grain Salad, loads of flavour and a great one to meal prep for lunch.

Dinner

Cauliflower and Chickpea Baked Eggs is a delicious alternative to the tomatoey kind.

Seared Ginger and Sesame Salmon Bowls, these are ridiculously delicious and quick to make.

Chicken Thyme, Carrot and Tahini Tray bake because tray bakes are the perfect easy cooking method.

Roast Pumpkin Spaghetti you can freeze any leftovers of this one making it very handy.

Snacks/dessert

You deserve a treat this week: berry and coconut skillet crumble is always a winner.

  1. Hi Holly. Tonight I made the chicken thyme carrot and bean tray bake from today’s offerings. It was lovely as usual as I love this type of meal. One comment though. It needs maybe two cups of stock or water to make it better and have some nice juices to soak up into the couscous or bread. I also added some chickpeas because I needed to use them and they were perfect. So…just a little bit of feedback to you for your otherwise amazing recipes. Just to let you know….,I cook at least two of your recipes each week! They are my go to’s…! Hope this comment is helpful. Keep up the good work. 👍
