Spinach is one of my go to vegetables to buy each week. If I’m planning on putting it in my smoothies and salads I usually opt for baby spinach but in curries and soups or anything cooked I love English Spinach. It’s an easy green to eat a whole load of as it wilts down to nothing , picks up the flavours of dressing and what ever ingredient it is cooked with really easily and has a lovely mild fresh flavour to it.
That’s why it’s the hero ingredient in this week’s 7 ways with post. The possibilities with spinach are so varied it was super hard to choose just 7 recipes but I’ve gone ahead and tried. Please let me know your favourite way to eat it in the comments!

Tofu and Spinach Pot Stickers (Vegan): the spinach soaks up all the dumpling flavourings in this recipe and adds texture to these tofu dumplings.
Sweet Potato, Spinach and Cashew Curry, this curry is a dry style curry and super simple to make. It works really well as a side dish too!
Beetroot, Spinach and Goats Cheese Galette, I love making free form galettes like this as they can be a little rough around the edges and are really just a vehicle for delicious toppings and beetroot, spinach and goats cheese is a classic.

Simple Green Smoothie, there’s no way I could write a 7 Ways With Spinach post and not include a green smoothie! I much prefer putting spinach in my green smoothies over kale as it’s easier for your body to digest raw and has a milder sweeter taste that works so much better in a smoothie. i only use kale when I’m using strongly flavoured fruit like kiwifruit or pineapple to balance it out.
