Just. Look. The. Golden. Crispy. Edges. I am obsessed with potatoes. Roasted is possibly my favourite kind. Roasted with salty feta melting against them, a hint of fresh lemon and fragrant oregano and I am done. These potatoes are the best.

These brussell sprouts are an ideal balance of flavours and textures. The tender centres and crispy outer leaves along with the crunch of the roasted almonds add texture and the dressing and gremolata add a balance of flavours and freshness in turn. Served over hummus it’s the perfect side, light meal or vegetarian mezze addition.

The hasselback potato has to be my favourite old school throw back. It’s pretty, golden and crunchy slivers hat hide the creamy interior and allow the potato to soak up so much more flavour are just the best idea ever.

That whole gut makeover month really reignited a love of blue cheese for me. And wholesome, hearty salads like this one. Golden chicken breast? Yes please! With sticky sweet potato and all the bitter leaves… yum! All finished with creamy blue cheese that melts onto the warm chicken and vegetables. Now we’re really talking.

One pan meals are always a good idea, and this garam masala spiced one is so easy! it’s a quick marinade then throw things in the pan. Even the rice is cooked in there. MISO SESAME ROASTED CAULIFLOWER AND PUMPKIN GRAIN SALAD
Yum yum yum! This salad is warm, and comforting and full of flavour. It’s also loaded with vegetables and totally winter appropriate. The crunchy toasted coconut, crispy bits of roast cauliflower and caramelised pumpkin are a killer combo. Especially with miso and sesame paste coating it all. Yes, yes, yes.
