Smashed Potatoes with Parmesan Chilli and Baby Rocket

So the whole ingredients list is basically in the recipe title here! This simple side dish is so delicious, it takes time but very little effort. And they’re the perfect side dish for a roast or as a part of a big table of food to share.

I love them with schnitzel and slaw too, or as a side with these baked salmon fillets. Either way they’re  a yummy side that looks pretty to boot, thanks to the contrasting colours and the crispy edged potatoes. The whole point of smashing them is to get cripsy edges and soft fluffy centre, a potato dream.

They do take a little bit of prep time as you need to par boil the potatoes before roasting. You want to boil them for 30 minutes minimum, or until tender as they need to be soft enough for you to ‘smash’ before roasting them. Smashing is not technical. it requires a flat surface and a little pot or something to press down on the boiled potatoes.

Choosing the right potatoes is important, you want them to be on the smaller side, 5 cm approx, otherwise the par boiling side will take FOREVER. Keeping the skin on is also key, so make sure you wash them well.

Serves 4 as a side

Ingredients

1 kg small potatoes, washed not peeled

1 Tbs Extra virgin olive oil

2 cloves garlic, skin on

2 Tbs parmesan, freshly grated

1 cup baby rocket

1 red chilli, finely sliced

1 small lemon

salt and pepper

Directions

Preheat oven to 190 degrees celsius. Line a tray with baking paper.

Place potatoes in a pot and just cover with cold water. add a generous pinch of salt and then bring to a boil. Boil for 30 minutes or until tender.

Drain potatoes and place one on a chopping board. take a small pot or wide based glass and press down to smash the potato. you don’t want to Completely flatten it just to squish it a little! Repeat with each potato and place on you line baking tray with the garlic. drizzle in oil and season with salt and pepper. Roast for 30 -45 minutes or until golden and crispy.

Remove from the tray and place on your serving platter. Sprinkle hot potatoes with parmesan, lemon zest, chilli and rocket.
