These are inspired by a special I had at Yafo in Berlin. It was deep fried pieces of pita, topped with pulled lamb, feta and pickled things. It was incredible. This is a lighter vegetarian take that’s really easy to make.

These are the last meal plans I’ll be sharing from Melbourne for awhile! It’s time to escape the cold and head somewhere warm.
I know, a carrot post in the middle of summer is weird. But they’re still readily available and these are the kind of carrots that only need 20- 30 minutes in the oven and they’re done. Quick cook times are what I’m here for (says the girl who made slow roasted lamb last week…).
And the holiday is almost over… I leave the US tomorrow to head to Auckland for a few days and then home before the next meal plans post. After the last week of eating out I’m enjoying being back at my sister’s and making some home cooked food. I basically ate anything I wanted in New Orleans and felt more than a little sluggish by the end of it! Worth it though;)
This week the meals are coming to you from New Orleans! I’m sure this trip is going to involving me eating loads of food – not all of it good for me (hey there beignets) and that’s totally okay. I’ll be back home soon eating a whole load of summery salads and the like and I can’t wait to share with you all the recipe ideas I have now.
This chickpea salad is the perfect thing to top avocado toast, have along side grilled meat or fish, or just eat for lunch along with some soft boiled eggs. I also love it as part of a mezze spread.
