Meal Plans Week 117

These are the last meal plans I’ll be sharing from Melbourne for awhile! It’s time to escape the cold and head somewhere warm.

I can’t wait to finally go to France, Germany and Italy for the first time and learn so much more about the food culture there! I’ll be sharing highlights with you each week and my Instagram stories and some posts will also give you a glimpse of all the delicious things I’m eating! Any tips are oh so welcome!

But for now, business as usual.

Plan A

Day 1: Sweet Potato and Black Bean Enchiladas, these vegetarian enchilada are the perfect winter comfort food.

Day 2: Tandoori Salmon and Cauliflower Salad with Raita this Salmon is so flavoursome and perfect with the in season Cauliflower.

Day 3: Chicken Thyme, Carrot and Tahini Tray Bake, this is an incredibly simple and ridiculously delicious recipe!

Day 4: Fettuccine with Brussel Sprouts and Hazelnuts in Creamy Sauce, the toasted hazelnuts give the best texture and flavour.

Day 5: Lamb, Eggplant and Almond Curry. This curry is easy to make and has so much depth.

Plan B

Day 1: Fettuccine with Brussel Sprouts and Hazelnuts in Creamy Sauce, a simple pasta full of texture and flavour

Day 2: Chilli Sesame Crispy Tofu Bun Bowls, the perfect combination.

Day 3: Sweet Potato and Black Bean Enchiladas, these vegetarian enchiladas are the cheesy and delicious.

Day 4: Creamy Vegan Mushroom Soup with Thyme, creamy soup that’s good for you.

Day 5: Pumpkin Dahl with Tomato and Spinach, this freezes really well too.

And this week’s bonus has to be my gluten free banana bread!
