know it’s only November and it might feel a little early for Christmas recipes, but Christmas is something I’m really looking forward to this year. It hopefully means travel, more freedom and lots of family. This recipe is also the perfect thing to share in November as Cherry season quickly approaches. A couple more weeks and the fresh variety will be readily available, frozen cherries will totally suffice until then.

It’s another long weekend in Melbourne and I’m excited about it because it means my birthday falls on a public holiday! The weather is glorious and we have enough freedom of movement now that I can to celebrate it with family and friends.
Pasta with Slow Roasted Tomatoes and Garlicky Basil Oil
This pasta is a go to. I often cooke tomatoes like this, lightly mash them with the roasted garlic and toss that through pasta but the basil oil brings this dish to a whole new level. It’s fresh but full of warmth.

I’m loving having a long weekend. It’s been so relaxing and full of yummy food. It would have been oh so lovely if we could have had a smidge more sunshine. Only being able to catch up outdoors and having a whole lot of rainy days isn’t that helpful.
Eggplant and Cashew Stir Fry
This is my work lunch this week and I’m obsessed. Sticky stir fried egg plant with golden roasted cashew and loads of garlic and spring onion. What’s not to love?

I am exhausted this week! A full week of social activity (aka in person teaching) has left me zonked and having a much needed recharge this weekend. Thus I’m into cooking the easiest things possible, and that’s reflected in the below ideas!
Peanut Curry Noodles with Ginger and Chicken Meatballs
The peanut curry soup base pairs so delightfully with the light and fragrant meatballs. You can even make the meatballs in advance for a quick week night meal. this isn’t a big bowl of soup, the soup base creates a sauce that the noodles poke out of and coats everything in deliciousness.

I’m going back to face to face teaching this week and it’s a weird feeling! I’m so excited for my students but I’m also aware it’s going to be an adjustment for all of us. Really glad we’ve waited until cases are this low to do it so the students and teachers don’t feel like they’re being put at risk, fingers crossed everything works out. I’m super excited to have a destination to walk to this week ha!
Rapini and Pine Nut Pesto
Have you heard or rapini? It gets called broccoli raab or rabe too and you can usually find it at green grocers or farmer’s markets. I’ve never seen it at a big supermarket in Melbourne but if you have, let me know. It’s part of both the cabbage and turnip families and used in Italian cooking. I love it as it’s like spinach with bite. If you can’t find it you could use spinach with a small handful of rocket thrown in for that bit of bite.

This weekend has been so lovely, I never thought that sitting in a park with some friends would mean so much to me. Being in Melbourne’s parks at the moment remind me of summers in London, such a festive vibe.
