This is a thick and creamy cauliflower soup rather than a smooth and silky one. It feels hearty to eat and is so easy to make. And then you’ve got haloumi croutons… and why have I never done that before? of course that’s bloody delicious.
Meal Plans Week 72
So 1 degree is apparently a thing we have to deal with in the mornings now. How is my memory of the seasons so short that each year I’m like, since when does it get this cold in Melbourne? And this weather has me turning my oven on as often as possible. Multi tasking heating is a great thing.
Blueberry Bread and Butter Pudding… without the butter!
This version of bread and butter pudding is a little shocking. It’s doesn’t actually contain any butter! I know, I’m crazy. Always living on the edge and playing fast and loose with… the names of things? That said, it’s delicious and filled with goodness and the perfect light dessert or brunch. It’s brunch/breakfast appropriate as it’s just bread, fruit, milk, eggs and some chia.
Vegetarian Makhani Curry
I swear it’s been at least a month since my last vegetarian curry recipe… right? I don’t want to actually check because I want to post this so just pretend it’s time for a curry recipe. Good? Great, let’s get on with it then.
Brussel Sprout, Thyme and Crispy Skinned Duck Breast Risotto
This is really a brussel sprout risotto, delicately flavoured with duck, and a crispy skinned duck breast sitting on top of it to finish it off. Because I’m fancy.

Snapper, Leek and Broccolini Orecchiette
My ideal pasta dish, filled with vegetables, a little protein and just enough sauce to coat those ‘little ears’. Seriously dreamy. The leeks are cooked slowly so they’re sweet and intense and are so lovely with the chilli and garlic, salty capers and bright broccolini and the just cooked snapper. Everything is finished with a tonne of lemon because I feel like that’s my ingredient of the week!
Lemon Creme Brûlée Bars
Lemon bars but not quite like you’ve had them before. By using coconut sugar and vanilla you can create a caramel like flavour that pairs so well with the lemon. Take advantage of citrus season and bake the easy lemon bars this week!
Meal Plans Week 70
This week’s meal plans are a mixture of old favourites and current favourites. there’s the easy vegetarian chilli from this week and a crispy tofu dish I’ve been craving not to mention one of the best crispy skinned fish health bowls I’ve ever made. Read on for some inspiration!
Quick and Easy Vegetarian Chilli
Chilli sin Carne for the win! This is such an easy recipe and by using canned legumes you save on cooking time, so when I say this is a quick recipe Immean for chilli! There,s about 15 minutes of active processes then you let it simmer for half an hour while you relax. Plus it’s brimming with veg and really filling.
