Meal Plans Week 82
I’m off on another adventure in a week and madly scrabbling to get everything done before then! Such as this meal plan post, and spending time with my adorable baby niece who has just arrived from South Africa, and getting all excited about my brother’s wedding next week. So it’s all go, thus meal planning is a must to keep me on track.

Well this isn’t exactly a sexy post now is it? I mean cabbage, it makes me think of every novel I’ve ever read set in a time of famine where cabbage soup was the go to food. And there’s probably good reason for that, not least because one cabbage goes a long way. And that is precisely why I’ve chosen it for today’s post. Because there’s very rarely one recipe that will use up an entire cabbage. It just keeps going and going.

This recipe is all about that sauce combining with the tender potato gnocchi. And wow that sauce. It’s full of deep umami rich flavour thanks to the sweet and sticky sundried tomatoes and sherry. And full of freshness form the basil. The ability of the eggplant to soak up flavour is what really make sit. Along with a good lug of extra virgin olive oil.
