Oh my oh my, another tempeh recipe, if you’d told me two years ago I’d be eating tempeh I would not have believed you. And boy do I get argumentative when I think you’re full of it. it’s not always pleasant for the full of it person… or me when it turns out I was in the wrong. But I’m into tempeh now… well sometimes, when it’s cooked in ways I actually like. And this definitely is one of those ways.

Eggplant and Mushroom Rigatoni Ragu with Hemp Seeds
This is my favourite quick vegan ragu. By adding the new Thompson’s hemp seeds you get extra protein in each serve which is ideal if you’re going meat free. When I’ve made vegetarian or vegan ragu using eggplant before I’ve slow roasted the ingredients to try and amp up the flavour but it turns out there’s a very simple short cut. A short cut that doesn’t compromise on flavour, I promise.
Za’atar, Oregano and Garlic Hassleback Potatoes
The hasselback potato has to be my favourite old school throw back. It’s pretty, golden and crunchy slivers hat hide the creamy interior and allow the potato to soak up so much more flavour are just the best idea ever.
Crispy Tofu with Broccolini and a Miso Broth
This is so easy to make and such a friggin’ delight. The crispy tofu is soft inside and if you cut into it with a spoon and get some of the broth to slurp up with it it’s just the most delightful bite on the flavour and texture fronts.

That title pretty much sums up this super simple salad entirely. But it also probably has you scratching your head going, but why miso and tomatoes? So hear me out.
