Easy Raspberry Crumble Slice

If you follow me on Instagram you’ll know I’m pretty obsessed with crumble this winter. So much so I’ve now been making this slice. It gives you perfect single serve crumble. Is great with a cup of tea or ice cream. And it’s quick to make!

I wanted a slice that was basically just like I make crumble. Not too sweet, using frozen fruit that you don’t need to pre cook and delicious. Lots of recipes get you to make the berries all jam like first but there’s no need. Frozen berries go jammy in the oven anyway and this way it’s not to sweet. You let their natural acidity shine through.

Use any frozen berry! Have fun with add ins in the crumble too, use gf flour if need be! You can double the recipe and make it in a brownie tin if you want more.

Makes 8 squares

Ingredients

1.5 cups oats

1 cup plain flour

2/3 cup brown sugar

1/4 tsp cinnamon

120g butter, diced

2 cups frozen raspberries

Directions

Preheat oven to 180c fan forced. Line a loaf tin with baking paper.

Mix dry ingredients together in a bowl. Rub butter into dry ingredients until it resembles bread crumbs that stick together when squeezed.

Spread 2/3 of crumble mix into the base of a lined loaf tin. Press in to create the base. Spread frozen raspberries on top. Follow with remaining crumble mix amd lightly press down.

Bake for 20 mins or until golden on top. Allow to cool in the tin for at least 10 mins. Cool completely on a wire rack and then slice.

Store in the fridge as there’s no added sugar in those berries! You can heat it up to eat or just have it at room temperature, or straight from the fridge. Or stir through ice cream!
