Meal Plans 37

I’m loving having a long weekend. It’s been so relaxing and full of yummy food. It would have been oh so lovely if we could have had a smidge more sunshine. Only being able to catch up outdoors and having a whole lot of rainy days isn’t that helpful.

And we have another week of that ahead, so I’m going to leave the picnic food themed posts until November! This week we’ve got colour and ease.

Breakfast

Miso and Mint Broad Bean Toast, Broad beans on toast are my spring favourite.

Light and Crunchy Muesli, this with natural yoghurt and berries is such a delicious breakfast.

Lunch

Snowpea, Feta, Almond and Asparagus salad. This is a staple at barbecues but also great as a light lunch.

Cauliflower, Pomegranate and Haloumi Salad. The prettiest of salads and the best lunch.

 

Dinner

Eggplant and Cashew Stir Fry, this quick and easy vegan dish is so satisfying.

Chicken and Zucchini Enchiladas in a Chipotle Tomato Sauce, this is one of my best friend’s most made recipes from this little blog, and she has excellent taste.

Prawn Pasta with Chilli and Blistered Cherry Tomatoes, this is one of my favourite pasta dishes ever.

Corn and Cabbage Slaw with Peanut Sauce, so good served with my Spring Onion, Coriander and Ginger Chicken (recipe on Patreon).
