One more week of stage 4 week lockdown to go and it’s been the nicest weekend of sunshine and spring blooms. I’m more aware of the change of seasons than ever before and want my plate to be as colourful as everyone’s garden.

This week’s meal plans totally reflect that vibe, enjoy all the colour!

Breakfast

Zucchini Waffle Breakfast Nachos, The most spectacular weekend brunch.

Coconut Chia Pudding, easy make ahead option.

Lunch

Hummus breakfast plate with honey sesame carrots not just for breakfast.

Cauliflower and Quinoa Salad Wrap, you can add carrot and pickles to this too

Dinner

Corn and Cabbage Slaw with Satay Sauce, great by itself or with roast chicken.

Chipotle Salmon Tacos, I love having a range of tacos so these plus Haloumi Tacos.

Caprese Baked Chicken, this is so good. Especially with some garlic bread on the side!

Creamy Herb and Pea Pasta, you can use fresh or frozen peas in this bright, zesty number.
