Happy Mother’s Day to all the mum’s out there! Hopefully by Monday you might be able to see your families in Victoria, I am so looking forward to being able to have a family dinner again. With that in mind, this week’s meal plans are full of my favourite things to cook.
Breakfast

Chipotle Chicken Lettuce Cups are the kind of slightly lighter dinner I need to have to balance out my carb intake!
Prawns and Chickpeas with Paprika and Saffron is the perfect thing to swipe fresh bread through if you’re on the baking band wagon.
Pumpkin and Spinach Skillet Lasagne is a quick version of a Lasagne, layers of pasta sheets, bechamel and pumpkin.
Tofu and Cashew Noodle Stir Fry for a take out at home feel…
