Meal Plans 8

The weeks are really starting to melt into one long dayish thing where I’m vaguely aware of the time of day but only can take a guess at the day. I’ve decided next week I need more of a routine so the days feel more different. If only I wasn’t sho shockingly bad at sticking to a routine…

I do know it’s Sunday today though because it’s time for a meal plans post. At least I’m sticking to this schedule! I’ve also been experimenting with making our favourite take away dishes at home, check out Instagram for any of these ideas! So far we’ve made pizza and fish n chips!

Breakfast

The frozen bananas and strawberries in my freezer are going to be coconut ice smoothies this week.

I’m going to get out the waffle maker one morning and attempt a vegan version of these potato waffles or I’ll save them for the weekend when I relax the whole vegan until 6 thing!

Lunch

Lunches at the moment are few and far between and usually consist of something really light as I’m not moving as much as I normally would during the day so I’m not getting as hungry. Broth like soups, light salads or mini pies are my vibe!

Vegetable and Chickpea Soup with Herb Pesto is a great pantry based soup and that herb pesto uses up any leftover herbs you have languishing in the fridge.

These Cauliflower, Parmesan and Thyme pies can be made vegan by using vegan pastry and replacing parmesan with a bit of nutritional yeast. They’re the perfect size of you make them in muffin tins. Serve them with salad greens or green beans and lunch is sorted.

Dinner

Vermicelli Noodle Salad With Ginger and Soy Mushrooms For a light and quick to make meal this noodle salad has been a life saver.

Gnocchi in a Rich Eggplant, Tomato and Basil Sauce The ability of the eggplant to soak up flavour is what really makes this sauce delicious. Along with a good lug of extra virgin olive oil.

Crispy Sesame Chicken Pieces The marinade coating this chicken is insanely tasty and the chicken gets golden and crispy so it’s a very good time.

  • Dessert
  • The only snack I’m really into at the moment is popcorn – cheap and delicious!
  • But dessert is on the cards, like this berry skillet crumble
