I totally wanted to have more new recipes for you this week but with emergency meetings at school and my decision to work extra days there I had no time! But as most other people I know a socially isolating and working from home I though I’d throw in some recipes with minimal ingredients and things that can be frozen. As well as something that’ll require more time if you’re up for the challenge!
The focus will also be on including fresh ingredients that last forever in your fridge (hey pumpkin, kale, cabbage, sweet potato and more). When I’m working from home I’ll do some videos showing you how to get the most out of what you buy. For now I’m teaching every day I can as I don’t know what will happen next term, or whether someone like me (casually employed on one income stream and sole trader for the other) will receive any assistance if we go into full lockdown. Hopefully they, do but hey you never know best to be prepared!
This weeks meal plan…
Breakfasts
1. I’ve been making my own muesli and having it with coconut yoghurt. New recipe coming soon but this is similar.
2. My partner bakes bread over the weekend so I’ll definitely be having peanut butter or avocado toast!
Lunches
These are both vegan things I can prep at the start of the week.
1. You can either use a vegan marinated cheese in this chickpea salad or feta if you’re not vegan or just leave it out! It’s my go to when I have limited options.
2. Eggplant and Potato Curry. I plan on making this today as I have eggplants and potatoes hanging around from last weeks shop. This also freezes well and doesn’t need any rice with it, the potatoes make it filling! You can is canned tomatoes instead of the paste and fresh tomatoes.
Dinners
1. It’s trash but totally what you want to make right now: Vegemite Noodles with Ginger and Sesame. Toss through some broccoli for extra goodness.
2. Pasta is a total vibe at the moment and this tomato oil and kale number can be made with minimal ingredients.
3. You can prep these pork schnitzels and freeze them which is a huge win and the Herb dressing is a great way to use up any leftover herbs.
4. Chicken Orecchiette Soup with Parmesan and Lemon. This recipe also includes tips on making a bone broth from the chicken bones and this the kind of make your ingredients go further trick you need when you’re avoiding the supermarket. Also, the perfect task if you’re working from home as you just let it bubble away in the background and check on it when you get up for a stretch.
And this week’s snacks? Caramelised banana muffins with cinnamon crumble are a great way to use up over ripe bananas.
