This week I’ve been focused on using up any leftover food I had from a few events on the weekend. I’m getting better and better at creating less waste but as anyone who has hosted a dinner party knows, it’s less stressful to voer cater than under cater! This recipe could come in handy at Christmas time too as it’s a great way to use up leftover roast pumpkin. I have included info on how to roast the pumpkin though!
I love roast pumkpin, it’s perfect smashed onto sourdough or as the basis for a salad and it’s a great dish for any sort of share table. You can also easily use the leftovers the following day in a salad but this recipe is for when you want to transform it. The easiest way to do this? Blend it!
Marinated goats cheese is the perfect salty, savoury balance to the sweet pumpkin. It’s a delightful salty sweet combination. You could also add any chopped nut you like, excluding peanuts, thye’d probably make it tste like peanut butter which although delicious, is not what we’re after.
I love this dip with celery or carrots, cracker and pita or spread on my toast in the morning. It is, in fact, incredible slathered on a piece of toast, dotted whit chunks of avocado then topped with a crispy fried egg and some herbs.
To roast the pumpkin: Cut pumpkin into wedges 2-4cm thick. Toss with olive oil and balsamic and place in a single layer in a roasting dish with a few cloves of garlic. Season with Salt and Pepper. Roast for 1 hour at 180 degrees celsius or until soft and golden. Skin on is fine!
Makes 1 cup of dip
Ingredients
2.5 cups roasted pumpkin, skin removed (a little extra or a alittle less will be fine.
1/3 cup marinated goats cheese
1 Tbs extra virgin olive oil
1/3 cup basil leaves (or chives)
salt and pepper to taste
Directions
Placethe pumpkin in the food processor and process for 30 seconds, scrape down the sides and add the oil, cheese and herbs. Pulse to combine, it doesn’t matter if there’s small chunks of cheese. taste and season.
Serve.
