I’ve been doing loads of client recipe testing this week which has kept me busy in the kitchen. This week I’m looking forward to cooking whatever I feel like!
And that’s what this week’s meal plan suggestions are all about, cooking delicious things!
Plan A
Day 1: Eggplant and Potato Curry, this is easy and delicious.
Day 2: Chicken, Thyme, Carrot and Tahini Tray with Caramelised Lemon. Love a tray bake! Minimal dishes, maximum flavour.
Day 3: Balsamic Mushroom Fettucine with Whipped Roasted Garlic, no more needs to be said this is so good!
Day 4: Sourdough Crumbed Fish Burger, I love making bread crumbs from stale bread specifically for this burger!
Day 5: Thai Red Curry Noodle Soup, Ramen style. Such deliciousness.
Plan B
Day 1: Balsamic Mushroom Fettucine with Whipped Roasted Garlic, a dreamy way to start the week.
Day 2: Broccoli, Goats Cheese and Potato Cakes, delicious supper or lunch.
Day 3: Satay Noodle Bowls and Salt and Pepper Tofu, this is one of my favourites.
Day 4: Eggplant and Potato Curry, this is perfect for batch cooking too.
Day 5: Quick Vegetarian Miso Ramen, easy end of week meal!
This week’s bonus recipe is Berry and Vanilla Skillet Crumble – an easy dessert that’s oh so satisfying.
