Hello again! I’m still in the south of France soaking up the glorious sunshine while I can as I’m well aware I’m going to struggle with the cold when I return!
But I haven’t forgotten about you – I do apologise if I’m being a little slow at responding to emails though!
To make up for that… here’s this week’s meal plans:
Plan A:
Day 1: Loaded Chicken Salad with Honey Mustard Dressing, this is a great option for work lunches or to turn into a sandwich.
Day 2: Spicy Cassarecce with Vodka, Basil and Parmesan, throw a little green salad on the side.
Day 3: Prawn Miso Noodle Soup For One – easy, quick mid week meal.
Day 4: Broccoli, Goats Cheese and Potato Cakes – an easy vegetarian supper.
Day 5: Beef Massaman Curry with Winter Vegetables, lean into winter.
Plan B:
Day 1: Sticky Miso Mushrooms with Sesame Noodles, this is perfect for work lunches too.
Day 2: Fragrant Dahl with Chickpeas, Spinach and Zucchini it’s always a good time for Dahl.
Day 3: Broccoli, Goats Cheese and Potato Cakes – one of my favourite easy suppers!
Day 4: Fresh Pea Falafel, Hummus bowls. These are as delightful as they look.
Day 5: Spicy Cassarecce with Vodka, Basil and Parmesan, perfect end of week easy meal.
This week’s bonus? Double Chocolate Tahini Cookies. Yum.
