It’s my first weekend in London and I’m so excited about it! I’m off to Berlin on Monday and then back in London for another week and a half.
This week’s meal plans have a slightly British influence because it’s where my head is at right now.
Plan A
Day 1: Potato and Chickpea Saag Curry, because for me curry has become synonymous with my time in London.
Day 2: Roast Chicken with a Zucchini and Leek Stuffing. I can’t go past a roast chicken and stuffing in this one keeps it super juicy.
Day 3: Grilled Eggplant with Hummus and Yoghurt Flatbread all comes together from scratch I’m under an hour.
Day 4: Chicken and Orecchiette Soup with Parmesan and Lemon, it’s a winter must do.
Day 5: Sourdough Crumbed Fish Burger for a fancy version of your corner fish n chip shop.
Plan B
Day 1: Grilled Eggplant with Hummus and Yoghurt Flatbread cannot get enough of this one.
Day 2: Mushroom, Kale and Lentil Vegetarian Sausage Rolls a sausage roll you can feel good about.
Day 3: Cauliflower Soup the original and it’s so good.
Day 4: Potato and Chickpea Saag Curry this is an easy and satisfying curry.
Day 5: Sundried Tomato and Roast Capsicum Pesto Pasta, use this sauce on everything!
And this week’s bonus? Chocolate brownie because why not.
