Meal Plans Week 115

I’m not going to do that thing when every time there’s a nice day in winter you start stressing about global warming… but man was it warm in Melbourne this week! The chilly nights however had me craving pies and curries and all things cosy.

We have our usual one omnivore plan and one vegetarian plan up for grabs, I wonder which one is more popular? Which one are you here for?!

Plan A

Day 1: Israeli Cous Cous Salad with Fennel, Avocado and Salmon this is such a delicious and easy to make salad.

Day 2: Quick Vegetarian Enchiladas, comfort food and cheese please.

Day 3: Autumn Chicken Tagine with Almonds and Apricots, the perfect flavours for this time of year.

Day 4: Roast Cauliflower Chowder with Haloumi Croutons and Herb Oil Drizzle. This soup is so satisfying! And Haloumi croutons!

Day 5: Osso Bucco Pie, this is a weekend dish as it takes some time and is indulgent but man is it worth it.

Plan B

Day 1: Tofu and Kale Creamy Korma Curry, this curry is thickened with cashews and it makes it so creamy.

Day 2: Fresh Pea Falafel Hummus Bowl, the colour inside these falafels is amazing!

Day 3: Roast Cauliflower Chowder with Haloumi Croutons and Herb Oil Drizzle. It’s time for more cauliflower soup.

Day 4: Quick Vegetarian Enchiladas, comforting, quick and yummmmm.

Day 5: Eggplant and Mushroom Ragu with Rigatoni and hemp seeds, hemp is such a great way to add protein to vegetarian dishes.

This week’s bonus? Brownie time! The skillet kind!
