Meal Plans Week 114

This is not the happiest of Sundays in Melbourne. I live in a bubble in the inner North of Melbourne where the majority of people care about the same things I do: taking care of each other, the well-being of those less fortunate and our planet.

I sometimes laugh about just how left wing it gets around here and I know it’s a bubble but I didn’t realise there so many people inAustralia that wanted to put their greed for tax cuts and extra money ahead of the greater good. Maybe that’s not why people voted to keep the Liberals in power but we now have more years ahead of us with a government that actually believes investing further in coal is our future. That’s enough on politics for now, I couldn’t not voice my thoughts on this as I have woken up very afraid for our future. That said I still eat meat in small amounts, and I eat dairy and seafood and I know all these industries have an affect on the environmental issue we’re facing. We all have our little battles to fight! And a much bigger one communally.

So this week is probably going to involve comfort eating as that’s the mood I’m in. There’s also a load of vegetarian options in there!

Plan A

Day 1: Pumpkin and Spinach Skillet Lasagne with Basil Vinaigrette, one of my favourite pasta baked to start the week.

Day 2: Chipotle Chicken cups, like Mexican San choy bao!!

Day 3: Vegetarian Khoa Soi Style Soup, a super comforting noodle soup.

Day 4: Prawns and Chickpeas with Paprika and Saffron. Serve with sourdough for comforting deliciousness.

Day 5: Middle Eastern Meatballs with Hummus, you can use any meatball with these even vegetarian

Plan B

Day 1: Vegetarian Khoa Soi Style Soup, yummy and quick noodle soup.

Day 2: Silken Tofu with Spicy mushroom sauce, this is like vegan ma Po tofu

Day 3:Pumpkin and Spinach Skillet Lasagne with Basil Vinaigrette, no intricate layering here, just delicious tumbles of flavour.

Day 4: Cauliflower and Potato Massaman Curry, you can use sweet potato or the normal white variety, both are yum!

Day 5: Moroccan Spiced Chickpea and Tomato Soup. Two soups in one week? Totally acceptable when they taste this good.

And the ultimate comfort food: homemade chocolate.
