Meal Plans Week 101

Sweltering. Sweltering is the only way to describe this weekend and I feel like we’ve had a lot of that lately. Wow, now I’m complaining about summer! It’s just that it makes me want to avoid turning the oven on or cooking at all and thus the summer recipes only trickle in… but the week ahead is looking more mild so I’ll be back at it.

This time of the year is also when life is getting back into full swing for everyone with school and work well and truly back it’s time to maximise leisure time! This often means quick and simple meals unless you’re like me and consider cooking leisure time…

On that note some easy inspiration for you:

Plan A

Day 1: Quick and Easy Vegetarian Enchiladas, these babies have a veggie and chickpea filling laced with cheese.

Day 2: Ginger and Sesame Flank Steak Rice Bowls with Pak Choy a super quick and delicious meal

Day 3: Easy Summer Baked Eggs, a little breakfast for dinner situation.

Day 4: Stick Ginger Chicken Meatball Bahni Mi – no need to make these mini.

Day 5: Easy Smoked Salmon Pasta with a Poached egg, adding a poached or fried egg on top of your pasta is an easy way to make a quick and luxurious sauce.

Plan B

Day 1: Easy Summer Baked Eggs, bring the weekend into your Monday.

Day 2: Cauliflower, Bocconcini and Balsamic Flatbread, this is super easy if you buy the flatbread base!

Day 3: Quick and Easy Vegetarian Enchiladas, you’ll have them ready to eat in less than an hour which is quick for enchiladas!

Day 4: Vegetarian Miso Ramen – this quick cheats version is a dream.

Day 5: Zucchini, Feta and Avocado Bruschetta, a light supper or easy lunch.

White Peach and Coconut Ice cream made into icey pole form is an easy win this week!
