3 Ingredient White Peach and Coconut Ice-Cream

 This is delicious creamy goodness  AND it has zero added sugar AND it’s dairy free. Guilt free creamy ice cream goodness with just 3 ingredients? Yes! Oh you’re so very welcome.

This recipe is incredibly simple but does take some time. If you’re going to be swanning about the house all day (this is my way of referring to my work from home days) then it’s no bother at all. If you forget to stir it as often as the recipe dictates and it freezes solid, no biggie, just chop it up blitz again and either eat as soft serve (nothing not to like there) or freeze again until it’s just scoopable. That’s all you’re really aiming for. Scoopable ice cream.

Or take the easier route. Just freeze as popsicles and be done with it. Still delicious and less remembering to stir required.

Now about the flavour. The delicate white peach, vanilla and coconut combination is dreamy. I keep the skin on and that’s what gives the ice cream it’s light pink hue. It also means no skinning fruit for you making the recipe as easy as possible.

Makes 1/2 litre

Ingredients

400ml coconut milk

2 white peaches, pit removed

1 tsp vanilla extract

Directions

Place all ingredients in a high speed blender and blitz to combine. Once smooth pour into a tupperware container with a lid and freeze for 90 minutes. Or pour into popsicle modes and freeze (if you do this you can skip the rest of the recipe).

Remove from the freeze and stir again making sure you mix through any icicles that have formed at the edges. Repeat again in an hour. At this point you should be starting to get frozen lumps, stir these in and then start stirring every half hour until a scoopable consistency. All up it can take between 4-6hrs.

Scoop and serve!
