Meal Plans Week 99

Happy Sunday! The sunshine has definitely set in this week and it’s been so hot in Melbourne that I’ve been forgetting to eat – does anyone else lose their appetite in the heat? This is actually a problem when you write recipes for a living as the only recipes I feel like testing involve smoothies and ice cream.

That said I managed to develop some really yummy things for the week ahead, there’s an amazing chicken salad, more pasta and a chia pudding recipe coming at you soon but for now it’s meal plan time!

Plan A

Day 1: Creamy Herb and Pea Pasta, start the week with a meat free Monday!

Day 2: Healthy-ish Chicken Nachos with a Chipotle Cheese Sauce – summer and Mexican food is a definite vibe.

Day 3: Nori Baked Salmon Salad Bowls – the nori protects salmon as it bakes for a super delicate piece of fish.

Day 4: Coriander and Lime Chicken Salad – fresh and zesty goodness.

Day 5: Okonomiyaki is a great way to use up leftover veg from the week.

Plan B

Day 1: Chipotle Tofu Bowls, there’s a few steps in this recipe but the result is super yummy.

Day 2: Creamy Herb and Pea Pasta is super satisfying and fresh

Day 3: Okonomiyaki is always my favourite easy dinner and this version is vego.

Day 4: Crispy Coconut and Sesame Cauliflower have it with quinoa and salad for a yummy dinner.

Day 5: Creamy Spiced Lentil Dahl is comfort food gone healthy.
