Meal Plans Week 95

Summer has arrived with a vengeance in Melbourne and after sweltering through a 38 degree (celsius!) day all I wanna do is eat salad, fruit and ice cream. And drink tinto de verano in the sun. All of that can’t be a daily occurrence but I can totally try.

Unsurprisingly I’m going to be striking a very summery vibe this week, loads of salads, basil tomatoes, zucchini and quick and easy weeknight meals.

The perfect anecdote to all those Christmas parties you’ve been tearing through the canapes at! There’s not judgement here! I love canapes – that’s why I’ll be releasing my first of two Christmas menus this week, and a New Years party menu to boot because parties are great, especially those with amazing food. I’m also doing catering gigs at the moment so there’s been loads of menu planning happening.

Plan A

Day 1: More of a light lunch than a full meal but super delicious none the less: Gem Lettuce, Dill Cashew Cheese and Parmesan. Make it snow with that microplane even though it’s 30 out.

Day 2: Loaded Chicken Salad, this is such a delicious combination of flavours and perfect for lunches too.

Day 3: Herb Crusted Salmon with Shaved Asparagus, Fennel and Broad Bean Salad, this salad is dressed with capers, parmesan and lemon and it’s so good with the salmon.

Day 4: This bowl of goodness is light, full of texture and flavour and basically a dream,   Sesame Tofu Rice Noodle Bowls with Thai Peanut Sauce 

Day 5:  Prawn and Cherry Tomato Pasta, it’s Friday so treat yourself to some pasta.

Plan B

Day 1: Haloumi Tacos, Not quite a salad but absolutely delicious and super quick and easy!

Day 2:Sesame Tofu Rice Noodle Bowls with Thai Peanut Sauce , Rice noodle salad with crispy tofu? Yes please!

Day 3:Gem Lettuce, Dill Cashew Cheese and Parmesan. These are the best starter or light meal, the cashews actually make it filling, perfect for a hot night.

Day 4:Chickpea and Barley Salad with Parmesan Dressing the dressing on this salad is so delicious you’ll want to put it on everything.

Day 5: Zucchini, Chilli and Garlic Pasta with Broad Beans and Lemon, Friday night pasta night? Can that be a thing?

I had a lovely reader ask me about healthy work snacks this week and I’m really into making little jars of coconut chia pudding at the moment and topping them with fresh fruit for a quick portable snack!
